i have been recently banned from a server for cheating when i wasn't, how can i show them that i wasn't cheating and that in fact it was actually lag?

Email the server admin..

Ask someone else to go into the server and have a word with the head admin..

now for the big question, how can i make a video of what i see in the game? and how do i get rid of the 10 secon delay?

You can't get rid of the 10 second delay and if you did, you'd probably be automatically banned by the server for flooding.
