Been messing with mine recently:

Allows you to change the graphics, fonts and strings (of text) in your Ipod its pretty darn cool.

And then to the crazy side of Ipod: http://www.ipodlinux.org

Dam crazy but it works! tried it myself, means you can browse your files, play other games, like tetris and minesweeper. You can record sound through your headphones aswell (all be it pretty poor quality).
