In this video from a couple years ago it shows that it was possible to change the model of a single car rather than all cars of the same type, is this still possible? I cannot see a way of doing it in the wiki all engine functions are for all of the same type not a single object.

It would be a great help if someone could point me in the right direction if it is still possible.

If I recall correctly, Talidan told me that all the engine functions were element based at the beginning, but it was unstable, so they made them global..
